Hello Wonderful Subscriber,
How are you?
What did you cook this last week?
This week, I have been reflecting on how I was addicted to coffee for energy, but I just knew it wasn’t good for my nervous system or my anxiety. To help me give up, I gave myself healthy treats. It worked like a charm.
These little Rasberry Bliss Balls gave me much more energy than coffee and they are delicious and so easy to make.
N.B. Organic is a must for this recipe.
½ cup macadamia nuts
½ cup sultanas
3 squares of vegan chocolate
8 organic frozen raspberries
Desiccated coconut for rolling in (the balls not you!)
Place the macadamias in the food processor and grind till fine, add the chocolate and pulse till fine, then add the raspberries and pulse, then the sultanas and pulse until all combined.
The mixture should have a soft texture and be easy to roll into balls in the palm of your hand. I like to make them quite small so I can have a few throughout the day.
Once they are rolled to your preferred size, roll them again in the desiccated coconut until fully coated. Then, put them in an airtight container and put them in the fridge, where they will firm up.
Hope you have a delicious week!
With gratitude Veet
That sounds delicious. And nutritious - that’s a win win. Keep up the culinary creativity. All the best x
I made panisse (chickpea fries) with carrot juice. I served it with diced sauteed zucchini, placed on top. My vegetarian friend loved it....me too. All the. best!
