What food is tied to your culture that brings comfort and memories? For me, it’s the simple scone. Many cultures have a basic and low-budget hearty dessert recipe. Here’s an English classic made vegan.
Delicious Healthy Gluten-Free Scones
Are you gluten-free for general health reasons or perhaps have Coeliac disease? And you’re a lover of scones and, like me, thought they were now a thing of your past?
This recipe is perfect for you and can also be made nut-free if you prefer. They are incredibly moreish, and they do crumble a bit, which actually is positive as it stops you from devouring them in one whole bite.
Ingredients
1 cup buckwheat flour
1/2 cup coconut flour
1 1/2 tsp gluten-free baking powder
1/2 cup almond meal (or 1/2 cup extra buckwheat flour if you want nut-free)
2/3 cup of almond or soy milk with two teaspoons of chia seeds
2 tbsp macadamia nut butter for nut-free use coconut oil or a vegan margarine or vegan butter
3/4 cup chopped dates
2 tbsp of coconut oil
2 tbsp of more soy or almond milk if the mixture is too dry and not binding
Method
Mix the flours, baking powder and almond meal together and lightly fold in plant-based milk with chia seeds and oil. Fold in the dates. Let the mixture sit for 15 minutes. Add a little more plant-based milk if needed. Then, roll the scone mixture on a buckwheat floured board to 3 cm thick and cut out rounds. You can make them as small or as large as you like. Place on a piece of oven-proof paper on a baking tray and bake in a 165 C oven for 15 to 20 minutes. I turned mine over halfway so they were brown on both sides.
Enjoy with a lovely cup of tea or a green smoothie (that will make a delicious meal as well as a great treat to snack.
